Concord is a high-performance versatile bread improver, developed for today’s baker who is looking for total versatility for all round use, designed to provide excellent tolerance

PIKES BUN, PASTRY & DOUGHNUT CONCENTRATE

METHOD: MIXING

• Mix on slow speed for two minutes

• Mix on second speed to ensure a well-developed dough

• Times may vary, dependent on type of mixer: Spiral, 4-6 minutes or Vertical, 6-10 minutes

• Finished dough temperature = 27°C (80°F)

• Divide into desired weights and hand up; rest for 10 minutes and mould into required shape

• Prove semi-dry for 35-40 minutes at 40°C (110°F), 75% humidity
